Today was really simple, until it got all busied up in the kitchen.
Two Hard-Boiled Eggs for Breakfast.
Bowl of Watermelon.
Another Bowl of Watermelon.
Some Frozen Grapes (not a lot).
One last Bowl of Watermelon.
On the way home, I passed by both Albertsons and the Vegetable store. Originally, I wanted to get stuff with which to make soup, but I wound up buying things to roast.
Ok, here we have Zucchini, Onions, Okra, Red Potatoes, Celery, Mushrooms, Eggplant,Sweet Potatoes, Cubanelle Peppers, Broccoli, Yellow Squash, Baby Carrots, Jalapeno Peppers, Asparagus pieces and Garlic Clove sections. All cut up and into the oven they went.
Just two and a half short hours later, they were done.
I put about a third of it in a bowl and finally... Dinner.
It came out really, really good. I have to remember that Eggplant does not stand up to the heat as well as the rest of the stuff, but other than that, it was sweet and delicious.
I had a second, smaller bowl around 40 minutes later. That was it for the night.
