Monday - A New Week; Fresh Fish

A Bowl of Watermelon.

I was going to go out tonight, then I wasn't. I was going to buy Vegetables and a piece of Fish at Albertsons, but they shut down the fish counter today at 7 pm., so I didn't.

I bought my Vegetables (and Watermelon) there, and I stopped at Publix for some Catfish. I got four filets that weighed 14 ounces.

I got everything ready to go.

I had some Asparagus, two Zucchinis, Two Yellow Squashes, Two heads of Broccoli, some bottled Mushrooms, Pepper Rings, Diced Jalapenos, Pearl Onions, Capers, a can of Diced Tomatoes for Chili, and a can of Tomatoes and Okra.

First, I nuked the Asparagus, because I was hungry, and I ate them.

Then, I cut up the Broccoli, sliced the different Squashes, emptied the two cans into the pot, added the Onions, Capers, peppers and Jalapenos, before mixing in some Garlic Paste and some Garlic Chili Sauce.

Once all that was ready, I covered the pot and let the whole thing go to town.

When the Squashes started to get soft, I placed the pre-seasoned Catfish Filets on top of the Vegetable mix, and covered the entire thing to let the fish steam.

I put two of the four filets on the plate and added a pile of Vegetables.

I finished all that. I then put away the other two filets and some Vegetables to take with me to work for Lunch tomorrow, and finished off the remaining Vegetables in the pot.

For dessert, I had some more Watermelon, and I am now sitting down to a bowl of Frozen Grapes before I head off to bed.
