I was hungry. Basketball is on. Plans to go out and atch the game somewhere fell through.
I was NOT buying a pizza today, so I rummaged through the refrigerator and found tilapia. I dug some more and came up with fresh mushrooms, diced jalapenos, pearl onions and pepper rings.
It all went in a frying pan. I used the juice from the peppers and pearl onions to steam everything.
I let it sit just a few minutes... and ready!
Not quite the hedonistic eating experience that downing a pizza is, but it was quick, delicious, and healthy. I can always eat a pizza tomorrow.
