Tuesday Fishday

Watermelon all morning.

Gordon surprised me today by making me Lunch. He sent a me a text the night before, but I didn't see it. I was just lucky that I hadn't cooked anything.

He whipped up some Steamed Salmon with a wonderful side dish: Zucchini Noodles with an Avocado/Lime/Cilantro/Mango Dressing.

I could write a whole book on the Avocado Noodles. They're not **really** noodles; they're just one long string of Zucchini. It turns out that Gordon ("It's pronounced Gor-Don") has a Zucchini Noodle Machine. Freaking Genius. I bought one on Amazon after Lunch... I will report back.

The whole of the Side Dish was (surprising to me) served cold. It looked like Pasta, so I thought it would be hot. After rebooting my expectations, I was really able to enjoy the dish. The Dressing (he blended it in his Ninja) was smooth and didn't have one overwhelming flavor -- it just tasted good.

Gordon joined me. He had Salmon, too, but with a different glaze and a different side dish.
 
Later in the afternoon, more Watermelon and a Frozen Banana.

On the way home, I made two stops. First to Albertsons for Catfish and Watermelon. Then, I stopped at the weekly Oakland Park Farmers Market to see what I could find.

It was drizzling out, so there were few vendors and fewer customers (pretty much, just me). I bought a couple of Eggplants for later in the week, and then I stopped at a booth called Kristen's Kreations, (wo)mannned by (of all people) Kristen.

Kristen had all kinds of prepared stuff. It all looked pretty good, but high in points. The one exception was her Stuffed Zucchinis. I bought two of those to go, figuring that they would go well with the fish.

When I got home, I seasoned and broiled the Catfish for ten minutes.

Kristen told me to put the Zucchinis in the oven, but I was a rebel and nuked them. Dinner was served.



Everything was great. The Zucchinis were stuffed with Escarole and Beans, and topped with Breadcrumbs and a little Parmigiana Cheese. Kristen was right; I should have baked the Vegetables. They would have been a little firmer. They were messy, but good.

I had some more Watermelon before bed, and that was it for the day.

  1. Well well, I was the one to make those zucchini noodles. That's my special dish that I came up with, I hope you enjoyed it. I need my 10 seconds of fame for the credit at least. Since I'm a vegetarian now, I have started to make new dishes like my Zucchini noodly doodlys with my special mango dressing.
