The Great Zucchini Machine!

Watermelon, more Watermelon and Frozen Grapes during the day. I had big plans for the evening.

On Tuesday, Gordon had made me Lunch. There was Salmon and Zucchini 'pasta'. The Zucchini thing was new to me, but he told me that there was a machine and it was fun, so I ordered one. It came today.

I decided that I would make Zucchini Pasta Primavara. I stopped at the Vegetable store on the way home and bought stuff for the Sauce (and Zucchini, too).

You're looking at a can of Diced Tomatoes, Capers, an Onion, two jumbo Portobello Mushrooms, Cilantro, Jalapeno Rings, a couple of Banana Pepper slices and some spices. I got to work on the Sauce first, heating up the Tomatoes, adding the Spices, dicing the Onion and chopping the Cilantro. I cut the Mushrooms into large chunks, so as to create *something* to chew on in the Sauce.

While the Sauce was simmering, I opened the machine an started making Zucchini Pasta.




You had choices: You could cut them very small, or slightly larger. I started small, but switched to the larger option early into the operation. The photo with me holding the Zucchini has the larger spirals. I wound up doing two Zucchinis.

While that was all going on, the Sauce was just about ready.

I put some of the 'pasta' on the plate and then topped it with some Sauce.


That was slightly less than half of the Zucchini, maybe 3/4 of one of them.

How was it? Freaking awesome. The Sauce was absolutely delicious, and it heated up the Zucchini somewhat so it became slightly soft. I may experiment with nuking the Zucchini for a minute or two before topping it next time.

I made another plate just the same, and that was it for Dinner for me.

As I was eating plate #2, Tom came over to do some plumbing work. He said that the house smelled great (I use a lot of Garlic), so I offered him some to take home. I used another Zucchini, and added a half a can of Diced Tomatoes and some quartered Artichokes to the Sauce that was remaining and let it heat up while he worked. When he was done, I packed it up for him and Sue to have for Dinner. I was so excited about my new machine, that I forgot to take his picture. Also, I was kicking myself for omitting Artichokes in the first place.

That was it for the day. It turned out to be an all-Vegan day. My friends Karen Jean, Debbie and Meredith would be proud. I didn't have any Protein today (not by plan; it just worked out that way), but I didn't feel any ill effects... usually not eating any Protein gives me a headache.

  1. I like how Gordon doesn't give me any credit on anything I buy or make for the kitchen. The vegetable noodle maker is awesome! I absolutely love it, because it's so much fun! I have a page with my vegetarian recipes that you might want to check out.
