Another Weekend! Here's a Video!

Saturday, July 19

I was still full from Turkey Neck Friday, so I didn't eat anything until around 2:00 pm.

My friend Caleb came over and we hung by my pool. I don't know a lot of eight-year-olds, but this kid's pretty smart. And likes pools.

Anyway, I ordered a Pizza for him. While we were waiting, I broke out the Fruit for me. I started with a Pineapple -- I love using my Pineapple Machine, and now it can hang out with the Zucchini Machine when I'm not home.

He either doesn't like Pineapple or was hell-bent on Pizza, because he passed on the Pineapple and left it all for me.
 
After that, I broke out the Watermelon.

Caleb declined the Watermelon, too, so I just cut it up and ate it throughout the afternoon. He did, however, enjoy his Pizza.

After taking him home and doing some shopping, I was back in the house and remembered that I had bought a Spaghetti Squash the other day.

I cut it in half, seasoned it and nuked it for 13 minutes. When it came out, it looked like this.




Or maybe it looked like that before I heated it. After, it pretty much looked the same, but was hot. Very hot. Very, very hot.

Anyway, the deal with this Squash is that you just use a fork and the Squash Meat comes out in strings, like Spaghetti. It works pretty well, except for the HOT part. Here, take a look at this video (if you get the blog in your email, you will have to go to website to watch the video):

When it was all emptied, I added half a can of Green Chile Enchalada Sauce. I saw it on the shelf, and it is pretty low on points, so I gave it a try. I added a little hot sauce to it first.

It was OK, and filling. I had the other half of the Squash later in the evening. And then, before bed, some more Watermelon.

For the first time in a few weeks, I got some serious steps in. Here they are.


Sunday, July 20

We have clients visiting this week, so I'm looking at probably two Dinners out. So I took it easy today.

When I got hungry in the afternoon, I opened a can of Salmon and mixed it up with Dijon Mustard, Garlic Powder, Onion Flakes, a few Banana Pepper Rings and a little Hot Sauce.

I forgot to take a picture of the finished product, but even though this dish is still a work in progress (not using mayo is my goal), today's attempt was a lot better than some of the previous ones. Viv suggested that I use a little Greek Yogurt. The problem is that I would have to actually have Greek Yogurt to try this. Aside from the Mustard, I added a little of the juice from the Peppers to aid in the mixing... that seemed to help.

Later, I polished off the rest of the Watermelon from Saturday.

Here's my steps. I never left the house today.
