I had defrosted a Turkey over the weekend... Thanksgiving is coming and they will be on sale again. I have to make room.
I went home for a late lunch and took the opportunity to get the Bird ready, so I could have it for Dinner. I decided to experiment a little and instead of the usual Marinade, I injected the Turkey with Coconut Milk. "What could it hurt," I figured. I put it in the roaster and went back to the office.
Four hours later, the house smells great and the Bird was ready.
All I did to it was inject it with about 2/3 of the can of Coconut Milk. I poured the rest on top of the Turkey and sprinkled some Weber Kick'n Chicken Seasoning on top... that's it!
I cooked it four hours in my electric Turkey roaster at 325 degrees. That's what it said to do on the Turkey, and they know best. I've never had a bad Bird come out of the roaster... that's really the secret to all this.
I started with the Neck and then had an assortment of Turkey Pieces.
It was delicious. The Coconut Milk showed up in spots while I was eating, and it was a treat. I will do this again. There's some fat in the Coconut Milk, but there's a ton of Salt in the regular Marinade, so I guess you pick your poison. Also, a lot of it dripped out and was in the bottom of the roaster, so it's not like I am downing an entire can of Coconut Milk.
I cut it up and put it in bags for Lunches and Dinner in the future, and had one more plate of food before I was done.
